Colombia Tolima FTO
Tolima is one of Colombia’s 32 zones, located centrally and about one-third of it is mountainous. As such, it’s very difficult to get to. The roads are not very well maintained, and FARC still has a presence in the region. In 2004, USAID teamed up with the ASOATA co-op, offering technical support to improve coffee quality as well as providing channels for organic certifications and export.
Members of ASOATA co-op all work on small farms and handle all of their own processing. Crop quality can vary, but the high altitude and mineral rich soil is a great place to start with coffee production. This lot has a creamy mouthfeel that supports the cherry and lemon notes for which Colombian coffee are known. This coffee also makes for an intriguing single-origin espresso.
